Chuma's Lemon Pie

Chuma goes to Sandown college every week, and makes recipes. Here is something that he made on the 15th of May, called Lemon Meringue Pie; maybe you would like to try it at home.

Ingredients

1 pack of shortcrust pastry (not frozen)

1 packet of Lemon Pie filling ("Greenís" from Tesco)

1 egg, 2 tablespoons of caster suger

Equipment: 7" sponge tin, rolling pin, whisk

Cooking Instructions

1. Roll out pastry on floured table and line 7" sponge tin.

2. Bake in oven for ten minutes

at 180†C. (if possible bake with a circle of baking parchment on top with sprinkled dried peas to keep in place)

3. Break egg, put yolk in cup, white in glass bowl

4. Empty packet of lemon mix into saucepan with ‡ pint cold water and stir. Add egg yolk and mix well. Stir mixture continually over a LOW heat until it boils. Check lemon capsule has dissolved.

5. Pour lemon sauce into pastry case and leave to cool.

6. Whisk the egg white until stiff. Add the 2 tablespoons of caster sugar and whisk again until firm.

7. Spread this meringue over the cooled filling until completely covered.

8. Bake in oven at 200°C (180°C for fan) 400°F Gas mark 6 for 5 minutes.

OR

Bake in oven at 160°C (145°C for fan) 325°F Gas mark 3 for 20-30 minutes. This takes longer but the meringue is much nicer.
