In ‘microwave cookery’ we enjoyed making and eating a Victoria Sandwich Cake.
Adapted from Annette Yates, 1995, ‘The Complete Microwave Book’, Clarion
Ingredients:-
175g (6oz) no-sift self raising flour
175g (6oz) margarine
175g (6oz) caster sugar
3 eggs
3 tablespoons of milk
honey
icing sugar
Utensils:-
Wooden spatula
Large mixing bowl
Scales
Fork
Knife
Sieve
2 tablespoons
Greaseproof paper
Round transparent dish
Greaseproof paper
Method:-
1. Lightly grease the dish and line its base with non-stick paper
2. Put flour, butter, sugar, eggs and milk into the mixing bowl and beat until smooth. Spoon the mixture into the dish.
3. Put the dish on a microwave rack and cook uncovered for 6-7 minutes or until risen. The surface should still be slightly moist but the cake beneath it should be cooked. (If you donít have a microwave, cook for ~25 minutes at medium heat until risen.)
4. Leave to stand for 5 minutes.
5. Turn out onto greaseproof paper.
6. Mix a few tablespoons of margarine and icing sugar in a bowl to make butter icing.
7. Split cake and fill with honey and butter icing. Sieve icing sugar over the top.
